Coating – Dry Ingredients:
- 1 cup flour (or GF flour)
- 1/2 tsp salt (or half-salt)
- 4 tsp cayenne pepper (or hotter)
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp black pepper
Coating – Liquid Ingredients:
1/3 cup of Marie Sharp’s Fiery Hot Sauce (or hotter)
1 egg, 1 tablespoon water
Toppings: Tomato slice, iceberg lettuce, low fat mayonnaise.
Protein: 2 chicken breasts – split in half horizontally to make 4 portions
Method:
- Combine wet ingredients in a bowl.
- Combine dry ingredients in a separate bowl.
- Pound chicken pieces between sheets of plastic wrap until about 3/8″ thick.
- Dredge chicken in flour mix first. Then coat thoroughly in the wet mix. Dredge once more in flour mix making sure to coat every area of the chicken.
- Drop into deep fryer for 5-6 minutes or for a lower calorie count, bake in a 375° oven for 12 minutes a side. If using oven, spray your cooking sheet with a cooking spray first so the coating won’t stick.
Serve on hamburger buns with mayo, lettuce, tomato slice on bottom half, cover with chicken and top bun. Take pics and save them to our Instagram page!
