Marie Sharp’s Jam Thumbprint Cookies

Preheat oven to 350 degrees, use middle rack.

Use traditional whipped shortbread recipe:

1 cup butter,

1.5 cups all purpose flour – sifted,

0.5 cups confectioner’s sugar.

Next, form into balls and then make small nests. Then, fill center with mango, banana, pineapple, guava, tropical mixed fruit, papaya jam, orange marmalade or the Marie Sharp’s Coconut Spread. Bake for 6-7 minutes at 350 degrees F until just barely golden. Following a cooling period, sprinkle with more icing (confectioner’s) sugar.

TIP: For coconut thumbprint cookies, first roll the ball of dough in toasted coconut to coat, then make your nest and fill with Coconut Spread – then bake.
